Ancho Chili Powder3 tbsp
Coarse Kosher Salt2 parts
Coarse Black Pepper2 parts
Ground Cumin1 part
Dried Oregano1 part
Garlic Powder1 part
Onion Powder0.5 parts

tbsp = tablespoon / cucchiaio

Ancho chili is sweet and complex, not hot — be generous

Preparation

  1. Mix all ingredients in a bowl.
  2. Apply generously on the cold beef from the fridge.
  3. Rest in the fridge uncovered for 12–24 hours.
  4. Cook straight from cold.

Notes

Ancho chili powder (dried poblano) is mild and sweet, not spicy. Don't substitute with generic chili powder blends that already contain cumin and salt. Use pure ancho powder.
