Preparation
- Mix all dry ingredients in a bowl.
- Apply generously to the brisket starting with the fat side.
- Press gently to help the rub adhere to the surface.
- Rest 30-60 minutes, or up to 24h in the fridge.
Notes
Slightly more complex than pure dalmatian but still beef-forward. The paprika helps bark color without adding sweetness that could burn.
