Coarse Salt2 parts
Coarse Black Pepper2 parts
Granulated Garlic1 part
Smoked Paprika0.5 parts

Preparation

  1. Mix all dry ingredients in a bowl.
  2. Apply generously to the brisket starting with the fat side.
  3. Press gently to help the rub adhere to the surface.
  4. Rest 30-60 minutes, or up to 24h in the fridge.

Notes

Slightly more complex than pure dalmatian but still beef-forward. The paprika helps bark color without adding sweetness that could burn.
