Salt1.5 parts
Black Pepper1 part
Garlic Powder1 part
Onion Powder0.5 parts
Dried Oregano0.5 parts
Cayenne0.25 parts

Preparation

  1. Mix all dry ingredients in a bowl.
  2. Lift the chicken skin gently and apply the rub directly onto the meat underneath.
  3. Apply a second layer on top of the skin.
  4. Best result: rest uncovered in the fridge for 12-24h — the skin dries and turns crispy during cooking.

Notes

Apply under and over the skin for maximum penetration. Overnight dry-rub rest in the fridge dramatically improves skin texture and flavor depth.
