Preparation
- Mix all dry ingredients in a bowl.
- Lift the chicken skin gently and apply the rub directly onto the meat underneath.
- Apply a second layer on top of the skin.
- Best result: rest uncovered in the fridge for 12-24h — the skin dries and turns crispy during cooking.
Notes
Apply under and over the skin for maximum penetration. Overnight dry-rub rest in the fridge dramatically improves skin texture and flavor depth.
