🧂 Classic All-Purpose BBQ Rub (Kansas City Style)

Ingredients & ratio

Brown Sugar4 parts
Paprika Smoked2 parts
Coarse Salt2 parts
Black Pepper1 part
Garlic Powder1 part
Onion Powder1 part
Cayenne Pepper0.25 parts
Chili Powder0.5 parts

Preparation

  1. Mix brown sugar with paprika first to prevent clumping, then add remaining ingredients.
  2. Add salt, pepper, garlic, onion, cayenne and chili powder. Mix well.
  3. Apply a generous layer to all surfaces of the meat.
  4. Press gently to adhere. Rest 30-60 minutes uncovered in the fridge.
  5. Note: for long cooks (brisket), reduce or eliminate brown sugar to prevent the bark from burning.

Notes

The most versatile rub in the system — works on pork and chicken equally well. Reduce or eliminate brown sugar if using on brisket since sugar burns at sustained high heat over long cooks.
