🧂 Classic All-Purpose BBQ Rub (Kansas City Style)

| Paprika Smoked | 2 parts | |
| Coarse Salt | 2 parts | |
| Black Pepper | 1 part | |
| Garlic Powder | 1 part | |
| Onion Powder | 1 part | |
| Cayenne Pepper | 0.25 parts | |
| Chili Powder | 0.5 parts |
Preparation
- Mix brown sugar with paprika first to prevent clumping, then add remaining ingredients.
- Add salt, pepper, garlic, onion, cayenne and chili powder. Mix well.
- Apply a generous layer to all surfaces of the meat.
- Press gently to adhere. Rest 30-60 minutes uncovered in the fridge.
- Note: for long cooks (brisket), reduce or eliminate brown sugar to prevent the bark from burning.
Notes
The most versatile rub in the system — works on pork and chicken equally well. Reduce or eliminate brown sugar if using on brisket since sugar burns at sustained high heat over long cooks.
