Espresso Steak Rub

| Coarse Kosher Salt | 3 parts | |
| Coarse Black Pepper | 3 parts | |
| Ground Coffee | 1.5 tbsp | |
| Garlic Powder | 1 part | |
| Onion Powder | 0.5 parts |

On steak, less is more — resist adding more ingredients
Preparation
- Mix all ingredients in a bowl.
- Pat the steak dry with paper towels.
- Apply the rub generously on all surfaces.
- Rest in the fridge uncovered for at least 1 hour (ideally overnight) before cooking.
- Cook straight from cold on a very hot grill or cast iron.
Notes
The coffee doesn't taste like coffee on the finished steak — it deepens the Maillard crust. Use on high-temperature direct cooks only, not low and slow.
