Espresso Steak Rub

General

Ingredients & ratio

Coarse Kosher Salt3 parts
Coarse Black Pepper3 parts
Ground Coffee1.5 tbsp
Garlic Powder1 part
Onion Powder0.5 parts

tbsp = tablespoon / cucchiaio

On steak, less is more — resist adding more ingredients

Preparation

  1. Mix all ingredients in a bowl.
  2. Pat the steak dry with paper towels.
  3. Apply the rub generously on all surfaces.
  4. Rest in the fridge uncovered for at least 1 hour (ideally overnight) before cooking.
  5. Cook straight from cold on a very hot grill or cast iron.

Notes

The coffee doesn't taste like coffee on the finished steak — it deepens the Maillard crust. Use on high-temperature direct cooks only, not low and slow.
