Ingredients & ratio

Coarse Salt2 parts
Black Pepper1 part
Ground Cumin1 part
Ground Coriander1 part
Garlic Powder1 part
Dried Oregano1 part
Sumac0.5 parts
Smoked Paprika0.5 parts

Preparation

  1. Mix all dry ingredients.
  2. Dry variant: apply directly to the shoulder and massage well into all crevices.
  3. Wet paste variant (preferred): add 3-4 fresh garlic cloves minced + 2 tbsp extra virgin olive oil and mix to a paste. More penetrating.
  4. Apply at least 4h ahead, ideally 12-24h in the fridge.

Notes

Bridges American BBQ technique with Mediterranean and Italian flavor profiles. Fresh garlic and rosemary can be added as a wet paste variant — rub the lamb at least 4 hours ahead, ideally overnight.
