Preparation
- Mix all dry ingredients.
- Dry variant: apply directly to the shoulder and massage well into all crevices.
- Wet paste variant (preferred): add 3-4 fresh garlic cloves minced + 2 tbsp extra virgin olive oil and mix to a paste. More penetrating.
- Apply at least 4h ahead, ideally 12-24h in the fridge.
Notes
Bridges American BBQ technique with Mediterranean and Italian flavor profiles. Fresh garlic and rosemary can be added as a wet paste variant — rub the lamb at least 4 hours ahead, ideally overnight.
