Brown Sugar3 parts
Coarse Salt1.5 parts
Smoked Paprika1.5 parts
Black Pepper1 part
Garlic Powder1 part
Chili Powder0.5 parts
Cayenne0.25 parts

Preparation

  1. Mix all ingredients — the sugar will clump slightly, this is normal.
  2. Cut the pork belly into 3-4cm cubes.
  3. Coat each cube in the rub, covering all surfaces well.
  4. Rest 30 minutes before placing on the fire.

Notes

Heavier on sugar than other rubs because pork belly benefits from a deep caramelized crust. Works as the dry base before the burnt-ends butter-and-sauce toss.
