| Smoked Paprika | 1.5 parts | |

| Garlic Powder | 1 part | |
| Chili Powder | 0.5 parts | |
| Cayenne | 0.25 parts |
Preparation
- Mix all ingredients — the sugar will clump slightly, this is normal.
- Cut the pork belly into 3-4cm cubes.
- Coat each cube in the rub, covering all surfaces well.
- Rest 30 minutes before placing on the fire.
Notes
Heavier on sugar than other rubs because pork belly benefits from a deep caramelized crust. Works as the dry base before the burnt-ends butter-and-sauce toss.
