Ingredients & ratio

Coarse Salt2 parts
Coarse Black Pepper1.5 parts
Granulated Garlic1.5 parts
Dried Rosemary Crushed0.5 parts

Preparation

  1. Crush dried rosemary finely before mixing.
  2. Mix all ingredients.
  3. Apply generously to the tri-tip, massaging well.
  4. Rest at least 1h at room temperature, ideally 12-24h in the fridge.

Notes

Traditional California coastal BBQ rub. Simple like the Texas dalmatian but with garlic and a whisper of rosemary. Apply at least 1h ahead, ideally overnight.
