When to apply

every 45–60 min during the stall, stop mopping 2 hours before end of cook

Ingredients & recipe

Beer240 ml
Apple Cider Vinegar60 ml
Melted Butter2 tbsp
Worcestershire Sauce1 tbsp
Garlic Powder1 tsp
Hot Sauce1 tsp

ml = milliliters / millilitri · tbsp = tablespoon / cucchiaio · tsp = teaspoon / cucchiaino

Preparation

  1. Combine all ingredients in a saucepan over low heat.
  2. Stir until butter melts and ingredients combine.
  3. Keep warm in a small pot next to the pit during the cook.
  4. Apply with a mop brush or spray bottle every 45–60 minutes during the stall only.

Notes

Stop mopping 2 hours before the end — continued moisture prevents bark from firming up. Use a flat lager or amber ale; avoid heavily hopped IPAs which turn bitter when reduced.
