Beer Brisket Mop
Texasthin, savory, beer-forward — keeps moisture during the stall
When to apply
every 45–60 min during the stall, stop mopping 2 hours before end of cook
Ingredients & recipe
| Beer | 240 ml | |
| Apple Cider Vinegar | 60 ml | |
| Melted Butter | 2 tbsp | |
| Worcestershire Sauce | 1 tbsp | |
| Garlic Powder | 1 tsp | |
| Hot Sauce | 1 tsp |
ml = milliliters / millilitri · tbsp = tablespoon / cucchiaio · tsp = teaspoon / cucchiaino
Preparation
- Combine all ingredients in a saucepan over low heat.
- Stir until butter melts and ingredients combine.
- Keep warm in a small pot next to the pit during the cook.
- Apply with a mop brush or spray bottle every 45–60 minutes during the stall only.
Notes
Stop mopping 2 hours before the end — continued moisture prevents bark from firming up. Use a flat lager or amber ale; avoid heavily hopped IPAs which turn bitter when reduced.
