Jerk Glaze

General

allspice, honey, thyme, hot — Caribbean lacquer for chicken and ribs

Ingredients & recipe

Ketchup120 ml
Honey3 tbsp
Apple Cider Vinegar30 ml
Allspice2 tsp
Cayenne1 tsp
Garlic Powder1 tsp
Onion Powder1 tsp
Cinnamon0.5 tsp
Dried Thyme0.5 tsp

Preparation

  1. Combine all ingredients in a saucepan over medium heat.
  2. Stir until the honey loosens into the sauce.
  3. Simmer 10 minutes on low until slightly thickened.
  4. Cool before use. Keeps refrigerated up to 2 weeks.

Notes

The allspice (pimento) is what makes this unmistakably jerk — don't substitute. Pairs best with chicken that already carries a jerk dry rub from earlier in the cook.
