Lemon Butter Sauce
Generalbutter, lemon, parsley — classic, light, for grilled fish and seafood
When to apply
baste during last 10 minutes; serve additional sauce on the side
Ingredients & recipe
| Butter | 80 g | |
| Lemon Juice | 45 ml | |
| Fresh Parsley | 2 tbsp | |
| Garlic Powder | 1 tsp | |
| Salt | 0.5 tsp | |
| Black Pepper | 0.25 tsp | |
| Cayenne | 0.125 tsp |

Preparation
- Melt butter in a small saucepan over low heat.
- Add lemon juice, garlic, salt, pepper and cayenne.
- Stir to combine and warm through — do not boil.
- Remove from heat and stir in the fresh parsley.
- Use immediately or keep warm in a bain-marie.
Notes
This sauce does not keep — make it fresh and use within 1 hour. The butter must not brown (beurre noisette) or it overpowers the fish. Keep heat very low.
