Lexington Dip
Generalketchup-vinegar hybrid, tangy with a hint of sweetness — Piedmont NC
When to apply
as a mop every 45 min during cook, then glaze in the final 15 min
Ingredients & recipe
| Ketchup | 120 ml | |
| Apple Cider Vinegar | 120 ml | |
| Water | 60 ml | |
| Brown Sugar | 40 g | |
| Hot Sauce | 2 tsp | |
| Worcestershire Sauce | 1 tbsp | |
| Black Pepper | 1 tsp | |
| Cayenne | 0.5 tsp |
ml = milliliters / millilitri · g = grams / grammi · tsp = teaspoon / cucchiaino · tbsp = tablespoon / cucchiaio
Preparation
- Combine all ingredients in a saucepan.
- Stir over medium heat until the sugar dissolves.
- Simmer on low for 10–15 minutes.
- Cool before use. Keeps refrigerated up to 2 weeks.
Notes
The Lexington Dip is the sauce of Piedmont (western) North Carolina — halfway between Eastern NC pure vinegar and Kansas City sweet. Thinner than KC, richer than Eastern NC vinegar.
