Ingredients & recipe

Apple Cider Vinegar240 ml
White Vinegar120 ml
Red Pepper Flakes2 tsp
Black Pepper1 tsp
Salt1 tsp
Sugar1 tsp

Preparation

  1. No cooking required — this is a cold sauce.
  2. Combine both vinegars in a jar.
  3. Add red pepper flakes, black pepper, salt and sugar.
  4. Shake well and rest 30 minutes before use.
  5. Store at room temperature up to 2 months.

Notes

Polarizing on first taste for newcomers — zero sweetness. The acidity cuts through pork fat perfectly. Mix 2-3 tablespoons directly into pulled pork before serving for authentic Eastern NC style.
