| Apple Cider Vinegar | 240 ml | |
| White Vinegar | 120 ml | |
| Red Pepper Flakes | 2 tsp | |
| Black Pepper | 1 tsp | |
| Salt | 1 tsp | |
| Sugar | 1 tsp |
Preparation
- No cooking required — this is a cold sauce.
- Combine both vinegars in a jar.
- Add red pepper flakes, black pepper, salt and sugar.
- Shake well and rest 30 minutes before use.
- Store at room temperature up to 2 months.
Notes
Polarizing on first taste for newcomers — zero sweetness. The acidity cuts through pork fat perfectly. Mix 2-3 tablespoons directly into pulled pork before serving for authentic Eastern NC style.
