🥫 Texas Brisket Mop Sauce
Texasthin, savory, slightly acidic — a basting tool, not a serving sauce
⏱
When to apply
every 45-60 minutes during the unwrapped phase of long cooks
Ingredients & recipe
| Beef Broth | 240 ml | |
| Apple Cider Vinegar | 120 ml | |
| Worcestershire Sauce | 60 ml | |
| Melted Butter | 2 tbsp | |
| Garlic Powder | 1 tsp | |
| Black Pepper | 0.5 tsp | |
| Hot Sauce | 1 tsp |
Preparation
- Combine beef broth, vinegar, Worcestershire and melted butter in a saucepan.
- Add garlic powder, pepper and hot sauce.
- Heat over low — do not boil.
- Keep warm beside the smoker throughout cooking.
- Apply with a pastry brush or mop every 45-60 min during the unwrapped phase.
- Stop mopping once the brisket is wrapped.
Notes
Not a serving sauce. Keeps the surface of the meat moist during long unwrapped phases. Use warm — cold mop drops pit temperature unnecessarily. Stop using once the meat is wrapped.
