🥫 Texas Brisket Mop Sauce

When to apply

every 45-60 minutes during the unwrapped phase of long cooks

Ingredients & recipe

Beef Broth240 ml
Apple Cider Vinegar120 ml
Worcestershire Sauce60 ml
Melted Butter2 tbsp
Garlic Powder1 tsp
Black Pepper0.5 tsp
Hot Sauce1 tsp

Preparation

  1. Combine beef broth, vinegar, Worcestershire and melted butter in a saucepan.
  2. Add garlic powder, pepper and hot sauce.
  3. Heat over low — do not boil.
  4. Keep warm beside the smoker throughout cooking.
  5. Apply with a pastry brush or mop every 45-60 min during the unwrapped phase.
  6. Stop mopping once the brisket is wrapped.

Notes

Not a serving sauce. Keeps the surface of the meat moist during long unwrapped phases. Use warm — cold mop drops pit temperature unnecessarily. Stop using once the meat is wrapped.
